This past week was my birthday, and not that I need an excuse to drink champagne, but birthdays are always a good reason.
This recipe I found is the perfect spring cocktail to freshen up champagne. The blackberry simple syrups is sweet but tart, while the mint leaves add a refreshing layer to the champagne.
This drink is the perfect compliment to a fresh salad and creamy vanilla birthday cake.
Ingredients
1. 1/3 c. blackberries, and more for garnish
2.1/3 c. water
3. 1/3 c. sugar
4. 1 bottle of Prosecco or Champagne
5. Mint Leaves
Instructions
1.In a saucepan, bring the blackberries, water and sugar to a boil. Turn to low and let simmer for 10 minutes. Strain blackberries and let the syrup cool.
2.Add 2 tbsp. of syrup in the bottom of each glass. Top with champagne and in mint leaves and blackberries to garnish.
