So about a month ago I decided that my body needed a re-boot. I have been feeling a little sluggish and “off” in more ways than one, and needed a good “spring cleaning” from the inside out. Enter: the Whole 3o. There’s a whole book and lifestyle based around the Whole 30 (read about it here) but the basics are that you focus on a vegetable and protein diet with limited fruit. That’s it. No dairy, no grains, no soy, no legumes, ect.
The whole idea of eating nothing but veggies and chicken for 30 days sounded super daunting, and it requires a lot of prep, but I can honestly say it was just the reboot my body needed. I can’t say that I always followed the rules to a T, but I learned some new recipes that were satisfying and left me feeling great.
One of my FAVS has been this sweet potato and chicken sausage hash. It’s seriously so easy! You just chop up all of the ingredients, toss them in a pan for about 10 minutes and you’re good to go!

1. 1-2 tablespoons of Olive Oil for the pan
2. 2-3 Sweet Potatoes cut in 1 inch cubes
3. 2 Bell Peppers (I like to do a green and red for color), cut
4. 1 package of Trader Joe’s Sweet Italian Style Chicken Sausage (pre-cooked), sliced
5. (optional) 1 small diced onion
6. Salt and Pepper to taste
